Rio Recipe: Tropical Green Smoothie Bowl

Creamy, naturally sweet and packed with antioxidants, this dairy-free smoothie bowl is an ideal breakfast treat to energise your day. Barley grass, the key ingredient, is packed with fibre, vitamins, minerals and chlorophyll, which helps to cleanse and rejuvenate the body.

Using frozen fruit makes this smoothie bowl deliciously thick and creamy - just like a pudding. For an additional probiotic boost, substitute the almond milk for kefir or a combination of yogurt and milk.

Preparation time: 5 minutes


Ingredients

1 banana, chopped and frozen

200g frozen mango chunks

1 handful of baby spinach leaves

2 tsp barley grass powder

2 tsp cashew nut butter or tahini

250ml almond milk or coconut milk

 

Toppings to serve: Choose your favourites such as goji berries, dried coconut, flaked almonds, chia seeds, sunflower seeds, sliced fruit etc.

Method

  1. Simply place all the ingredients in a high-speed blender or food processor and blend until thick and creamy.
  2. Pour into bowls and top with your favourite toppings to serve.
