Yerba Maté (Ilex paraguariensis) is a South American tree that is cultivated to produce a green leaf tea. Yerba Maté leaves naturally contain caffeine (approximately 1.68%). For traditional preparation, powder can be prepared ‘thick’ or ‘thin’ depending on preference. For a thin mixture, whisk half a teaspoon (2.5g) with 75ml of hot water or milk. For a thick mixture, whisk a heaped teaspoon (5g) with 40ml of hot water or milk. Whisk until frothy. Yerba Maté tea tastes better when made at just off the boil (60-65°C) and can be made with more water if desired.
